Really wanted something sweet after my night at work, so I decided to try out a mug cake recipe that James found, here.
Super simple - buy a box of angel food cake mix, and a box of whatever flavor cake you want (I went with french vanilla). Mix the two mixes together in a gallon zip lock bag for storing. Get a coffee mug, mix together 3 tablespoons of the mix and 2 tablespoons water, and stick it in the microwave for 1 minute. Another minute to let it cool, and you have a single serving of cake! Om nom nom.
I just put a little bit of cool whip on mine, but there’s so many other ways he’s been finding that you could make this less plain and such. He can mess with that, though… for me the little bit of cake was just what I needed this morning. :)
